Curried Pork Burgers

Ingredients

  • 1/4cup light mayonnaise
  • 1/4teaspoon curry powder
  • 1 1/2pounds ground pork
  • 1/4cup finely chopped red onion
  • 3cloves garlic, minced
  • 1teaspoon curry powder
  • 1teaspoon Worcestershire sauce
  • 1/2teaspoon salt
  • 1/2teaspoon ground black pepper
  • 1/4teaspoon crushed red pepper
  • 21/2-inch thick slices red onion
  • 2teaspoons olive oil
  • 4slices Texas toast
  • 4red cabbage leaves
  • Directions

    1. In a small bowl combine mayonnaise and the 1/4 tsp. curry powder; set aside. In a large bowl combine pork, chopped red onion, garlic, 1 tsp. curry powder, Worcestershire sauce, salt, black pepper and crushed red pepper. Shape into four 3/4-inch-thick patties. Lightly brush red onion slices with olive oil.
    2. Grill patties on the rack of a covered grill directly over medium heat for 14 to 18 minutes or until done (160 degrees ), turning once halfway through grilling. Add red onion slices the last 8 minutes of grilling, turning once. Grill Texas toast slices for 1 to 2 minutes per side or until toasted.
    3. Place a cabbage leaf on each slice of Texas toast. Spread with mayonnaise mixture. Top with pork patties and some of the red onion. Makes 4 servings.
